Agron and Sandra refuse to take shortcuts and reject modern technologies; instead, they make cheese in harmony with nature and according to tradition and taste. Their story is an example of courage, integration, and revendication, besides trust and spirit of welcoming. Agron left his country to make a living in Italy. Sandra invested in her local area. Together, they carry on a centuries-old tradition of cheese making, not only Sicilian but also a heritage shared by all Mediterranean cultures. An alfresco of Italy in response to economic crisis and global change thanks to a combination of grass-roots vision of the world and traditional wisdom and need for sustainability.
