Together, they carry on a centuries-old tradition of cheese making, not only Sicilian but also a heritage shared by all Mediterranean cultures. An alfresco of Italy in response to economic crisis and global change thanks to a combination of grass-roots vision of the world and traditional wisdom and need for sustainability.
