Can the social innovations deriving from the introduction of safety norms co-exist within a small factory that has been in the business of artisan chocolate making for nearly a century? Emblematic is the case of Peyrano, a symbol of Turin confectionary tradition, founded in 1914, now specialized in chocolate production. We learn directly from the workers' own accounts of how this is possible.
